On a Weekend, when you get up around 10 or 11 in the morning, and your husband takes his favourite couch to watch what's in the idiot box....he humbly asks you....Darling! Whats for breakfast? You just go mad entering to the same old kitchen not deciding what to make? Well...The above situation arises every weekend at my place. And I go for the same old quick toasts and omelette. Now you all must be thinking, whats so special about the ordinary omelette recipe? We all know how to make that!! Friends, I will just add an "Extra Cheesy" to that ordinary recipe.
This is a "Souffle Cheese Omellette" recipe. Same old omelette made with a slight variation. "Souffle" in French means "to puff up" and cheese means "Calories"... :) Well, one wouldn't mind adding some C into their diet during weekends. We can carry forward those to Mondays...Can't we?? ;) Its Eggilicious!!
Serves: 2
Ingredients:
- 4 Eggs
- 1 tbsp Grated Parmesan Cheese (Optional)
- 1 tbsp Shredded Cheddar Cheese
- 1 Ordinary square Cheese slice (The one which we put on sandwiches)
- 1/2 cup snipped chives (If not available, substitute with chopped coriander leaves)
- 10 gm Butter
- salt and pepper for seasoning
Method:
1) Break the eggs and separate the whites and the yolks in two different bowls. Beat the yolks well with a fork and season well with salt and pepper.
2) Now beat the egg whites with a whisk or an electric beater until it forms a good foamy like texture. It would look like a soapy lather.
3) Now, put a non stick fry pan on gas and melt the butter.
4) Meanwhile, pour the yolks into the white foam along with parmesan cheese, cheddar cheese, the chives/coriander leaves and mix everything together but gently.
5) Pour 1/2 of the the mixture into the fry pan and leave it on low heat for a minute.
6) Now put the square cheese slice exactly on the middle of the omelette and gently fold the omelette it into half. Leave it for 30 sec. Flip the omelette so that the other half also cooks. You can switch off the gas, when you know that the omelette is fully done.
7) Repeat the process for the other half of the egg mixture. Serve with crisp toasts spread with butter!! And Yeah,...Spread the love too! :)
