Spanish Tortilla (Omelette)

Whenever I thought of making a simple omelette for my breakfast, I always wanted to try out the Spanish version of it but never made for the simple reason that it is super rich & heavy. But last weekend, I just couldn't resist & committed this sin. But my tummy was at peace. Ah! Tortilla! Sabroso! "Spanish Tortilla" is one of the popular Tapas dish in a Spanish cuisine. You should not miss out on this one. This Potato & onion filled thick omelette wedges complete any tapas combination. "Tortilla" in Spanish means "Little Cakes" & this sure looks & tastes like one. You can make these delicious rich tortillas and pack them up in your kids lunch boxes or can even serve as an appetizer at any evening parties. Spicy Nasi Goreng

Have you got loads of left over rice from yesterday? Don't know what to do with it apart from the usual curd rice, lemon rice or tomato rice? Why not try making "Nasi Goreng" with it for a change. I had a similar situation last night. So just took out my cold rice from the refrigerator, improvised it by mixing some vegies, eggs, garlic, onion & some soy sauce. And served a spicy hot fresh dinner in minutes. :) Nasi Goreng, is the National dish of Indonesia. It is popular in most of the South Asian countries & has got a Chinese influence to it if you see the use of the ingredients. It actually means fried rice where pre-cooked rice is mixed with any combination of veggies, chicken, prawns or eggs with the rice. You can cook fresh rice but should be done before hand & cooled for a long period of time. Cinnamon French Toast

Every one knows to make a simple French Toast, so this won't be difficult at all. Am just adding up some cinnamon into the original version. This was our quicky breakfast today morning, because I got up a little late than usual. This is a sweet version of eggy bread that's wonderful for a lazy weekday breakfast making. Have a bite & off you go for your work. :) Ingredients: 4 eggs 4 tbsp milk 6 slices of bread 1 tsp ground cinnamon 4 tsp sugar 1 tsp oil (or a cooking oil spray) Method: Mix half the ground cinnamon with the sugar & set aside. Beat the remaining cinnamon together with the eggs & milk in a shallow dish. Cut the bread into triangles & dip into the egg mixture. Heat a non-stick frying pan & spray some oil. Cook the eggy bread one by one, cooking both sides for 2 minutes, over a medium heat, until crisp. Sprinkle the french toast with some cinnamon sugar. Wanna make it healthy?? Kerala Style Egg Roast

A super spicy, Egg ilicious recipe coming straight from my native, The "Keral Style Egg Roast". It has an authentic Kerala touch to it as a generous amount of coconut oil & lots of curry leaves are added in this dish. This dish is very popular in every Kerala household as well as the local restaurants & is a great accompaniment to Vele Appam, Idi Appam, Pathiri, Parotta or any other steamed pancake or Indian bread. Sweet Corn Fritters

Today I bring to your dining table, the taste of The United States of America. Its a common breakfast dish served in the States. Nope...its not pancakes. They do have some other amazing stuffs too other than pancakes and maple syrup. :) Its "Sweet Corn Fritters"!! This cooked breakfast is a taste of America - a delicious, different way to start the day. Just try it if you want a little change from your usual omelette. :) Ingredients: 4 eggs (beaten) 1/2 medium red onion (finely chopped) 1/2 tsp dijon mustard (optional) 200 gm sweetcorn (I use the tinned one) 2 tbsp chopped parsley (can use coriander leaves) 2 tomatoes (thick round slices) salt & pepper for seasoning cooking oil to drizzle Method: Heat your omelette pan & drizzle some oil into it. Cretan Potato and Egg Salad (Greek)

Love and Calories present to you some healthy eating options as well. I thought of including some quick to make dishes, which anybody can prepare, in no time and will be a "less oil, no fry" task too. My first recipe will be a "Cretan Potato & Egg Salad". Sounds posh isn't it?? :) Well, I believe that more complicated or sophisticated the name of a recipe, the more easier it is to be prepared. You will know why.....:) The two main ingredients of this Greek Summer salad are the Cretan potatoes and hard boiled eggs. Potatoes grown in Crete (a sunny coastal region in Greece) has a warmer flavour to it, which makes this salad more flavourful. On a Weekend, when you get up around 10 or 11 in the morning, and your husband takes his favourite couch to watch what's in the idiot box....he humbly asks you....Darling! Whats for breakfast? You just go mad entering to the same old kitchen not deciding what to make? Well...The above situation arises every weekend at my place. And I go for the same old quick toasts and omelette. Now you all must be thinking, whats so special about the ordinary omelette recipe? We all know how to make that!! Friends, I will just add an "Extra Cheesy" to that ordinary recipe.
