Simply Lassi (Basic Version)

"Weather" and "Food" are two such topics without which any conversation is incomplete. So yesterday while talking to my sister on the phone, not surprisingly both the topics came in our chat. She was complaining about the Indian heat and how I was enjoying here abroad. (If only she could experience the awful UK weather!!). Then as soon as we ended our chat, I suddenly thought of making "Lassi" for myself instead of my evening coffee. The Indian summer forced me to make a chilled glass of lassi. :)

Lassi is a typical North Indian (Punjabi) yoghurt based shake which after drinking makes you relax and hydrated in those scorching summers. Lassi is quite refreshing, healthy and quite filling. Lassi can be sweet or salty or can be modified by adding fruits to it. Mango Lassi is quite famous in restaurants. Well, today am just going to share you the very basic version of a LASSI. Drink it quick and wipe those white mustache from your lips and say aaaaaahhhhh!! :)

Ingredients:
  • 300 ml curd
  • 1/2 cup cold water
  • 3 tbsp sugar
  • 1/2 tsp cumin powder (if you can roast the cumin seeds before powdering it, nothing like it!!)
  • 5-6 mint leaves
  • 5 ice cubes
  • pinch of salt
Garnishing:
  • a sprig of mint leaf
  • pinch of cumin powder
Method:
  1. Blend the above ingredients together in a blender/mixer until frothy. Garnish it with a mint leaf and sprinkle some cumin powder. Serve chilled.
  2. There's no step 2nd!! Isn't it super-duper easy? :)

Hundred Thousand Dollar worth Rava Upma (Indian Semolina Polenta)

Now you must be thinking, who doesn't know to make Rava Upma? What is so special about it? Paneer Couscous Salad

Last two weeks were so hectic for me that I didn't find time to even open my blog page. Lots of friends coming home, cooking, eating junk, visiting places, our famous festival "Vishu" came up  & finally I ended up getting sick. I am still in bed but was so frustrated doing nothing that I thought let me post one of my healthy salad recipes which I had promised earlier. I saw this salad recipe in one of the BBC cookery shows & was quiet eager to make it. The original recipe suggests the use of Halloumi instead of Paneer. Halloumi is a type of Greek cheese made of mostly Goat's milk. It has the same texture of that as Paneer, hence I used Paneer.
